Sweet Corn Soup
Sometimes, I want things that I usually do not eat. This time it was about sweet corn. Organic corn has many health benefits. It is loaded with zeaxathin and lutein. They are important nutrients for vision. This soup will satisfy cravings for something warm and sweet. 1 yellow onion chopped, 1 large carrot chopped, 1 yellow/orange bell pepper chopped, 1 clove of garlic (optional), 2 sticks of celery or 1 cup of chopped green cabbage. 1-2 Tbsp of ghee Salt, turmeric, cinnamon ½ of lemon 1 cup of fresh cilantro or any other greens (kale, collards, parsley, broccoli) chopped 1 can of sweet corn or 1 cup of frozen corn ½ cup of polenta/corn meal. 1 avocado
Prepare polenta according to instructions (boil 1 cup of water, add cornmeal, stir and cook on low heat about 20 min).
In a pot with thick bottom melt ghee, add chopped vegetables (not greens) and ½ of cup of corn, saute on medium heat for 10 min, then add 2 ½ cups of water or broth, cover with the lid, keep cooking for another 10 min.
Blend cooked veggies, add salt, 1 tsp of turmeric and cinnamon, squeeze lemon. Transfer everything into your pot, add chopped greens, add the cooked cornmeal into soup, stir and add the rest of the corn. If you like spicy food, add a pinch of red pepper. Add avocado into the bowls with soup (1/4 per a bowl)
