Simple Spinach Soup
Often life is not simple. Perhaps, you have experienced the overwhelming feeling of cooking 3+ times per a day.
This soup can make your day easier because of ordinary ingredients and extraordinary refreshing taste, plus abundance of nutrients. 1 white onion chopped, 1 apple chopped, 1 carrot chopped, 3-4 handfuls of fresh spinach, 2 cups of broth or boiled water, ½ cup of roasted sunflower seeds, a piece of lemon, ¼ tsp of salt, pepper, oregano, 1 Tbsp of avocado oil (or ghee, or butter).
Saute white onion in 1 Tbsp of avocado oil (or organic butter from pasture-raised cows) until it is golden, add 1 chopped apple, 1 carrot, 3 -4 handfuls of spinach, 1 cup of broth or boiled water, simmer for 10 min under the lid on medium heat. Transfer 1/2 of the pot into a blender, add 1/2 of a cup of roasted sunflower seeds, a small piece of lemon, 1 cup of boiled water blend well, then add the rest and salt, blend again.
It is ready! I like it with black pepper and oregano. Oregano has antiviral and anti- bacterial properties. Spinach and sunflower seeds provide protein and fats, lemon adds tartness, an apple – sweetness.
